Oatmeal Cinnamon Muffins

The days are already shorter, but you can still have a great day if you start your morning with these Oatmeal Cinnamon Muffins and a cup of hot coffee.

Yield: 12 pieces



  • 1 cup all-purpose flour

  • 1 cup British Class Quick Rolled Oats

  • 1 tsp baking soda

  • ¼ tsp salt

  • ¾ cup British Class Turbinado Sugar

  • 1 egg

  • 1 cup milk

  • ¼ cup vegetable oil

  • 1 tsp Cool Runnings Vanilla Extract

  • 1 tbsp Cool Runnings Ground Cinnamon



  1. Preheat oven to 325ºF. Line muffin baking tray with 12 muffin cups.

  2. In a medium bowl whisk together British Class Turbinado Sugar and egg until uniform. Add oil, milk, Cool Runnings Vanilla Extract, Cool Runnings Ground Cinnamon and whisk until well incorporated.

  3. Add British Class Quick Rolled Oats and whisk until incorporated. 

  4. Sift the flour, baking soda and salt over this mixture and fold until uniform.

  5. Scoop the batter into the muffin cups, about 3 tablespoons per cup.

  6. Bake for about 20 minutes or until you insert a toothpick to the centre of the muffin and it comes out clean.

  7. Enjoy!
