Cheese-Caramelized Onion Toast

Yield: 2 servings

 

Ingredients

  • 2 sliced of bread, toasted

  • 1 tbsp butter, divided

  • 1 onion, thinly sliced

  • 1 tbsp British Class Demerara Style Brown Sugar

  • 2 cups spinach, cleaned

  • 1 tsp Cool Runnings Caribbean Spice and Roasted Garlic

  • 2 tsp mayonnaise

  • 2 slices of cheese

  • 2 slices of bacon (optional), cooked

  • 8 cherry tomatoes, halved

 

Directions

  1. Warm up a frying pan over medium-high heat and melt ½ tbsp of butter.

  2. Add the onions and British Class Demerara Style Brown Sugar and stir a couple times until onions are brown, about 8 minutes. Reserve.

  3. In the same pan, melt the remaining butter and add the spinach and Cool Runnings Caribbean Spice and Roasted Garlic. Stir until spinach wilts, about 2 minutes.

  4. Assemble each toast with 1 tbsp of mayonnaise, one slice of cheese, one slice of bacon, half of the spinach and half of the caramelized onions. 

  5. Top them with the cherry tomatoes and enjoy!
