2 sliced of bread, toasted
1 tbsp butter, divided
1 onion, thinly sliced
1 tbsp British Class Demerara Style Brown Sugar
2 cups spinach, cleaned
1 tsp Cool Runnings Caribbean Spice and Roasted Garlic
2 tsp mayonnaise
2 slices of cheese
2 slices of bacon (optional), cooked
8 cherry tomatoes, halved
Warm up a frying pan over medium-high heat and melt ½ tbsp of butter.
Add the onions and British Class Demerara Style Brown Sugar and stir a couple times until onions are brown, about 8 minutes. Reserve.
In the same pan, melt the remaining butter and add the spinach and Cool Runnings Caribbean Spice and Roasted Garlic. Stir until spinach wilts, about 2 minutes.
Assemble each toast with 1 tbsp of mayonnaise, one slice of cheese, one slice of bacon, half of the spinach and half of the caramelized onions.
Top them with the cherry tomatoes and enjoy!
