2 sliced of bread, toasted
1 tbsp olive oil
1 onion, diced
1 garlic clove, minced
½ cup corn
½ bell pepper, diced
1 tbsp Cool Runnings All Natural All Purpose Seasoning
1 avocado, sliced
Salt and white pepper, to taste
Heat up a frying pan on medium-high heat.
Add olive oil and once it's warm. Add the onions and stir until translucent, about 3 minutes.
Add garlic and stir until it loses the pungent smell, about 2 minutes.
Add corn, bell peppers, and Cool Runnings All Natural All Purpose Seasoning and stir until all veggies are cooked, about 5 minutes. Adjust the seasoning.
Place half of the vegetables over each slice of bread, top it with the sliced avocado and enjoy!
