1 can (400ml) Cool Runnings Coconut Milk
1 cup water
⅔ cup white rice
¼ cup British Class Turbinado Sugar
1 tsp Cool Runnings Vanilla Extract
1 tsp Cool Runnings Ground Cinnamon
½ tsp Cool Runnings Ground Allspice
¼ cup raisins
In a small saucepan add the water, Cool Runnings Coconut Milk, rice, and British Class Turbinado Sugar.
Stir and let it cook over medium heat until rice is almost fully cooked, about 15 minutes.
Add Cool Runnings Vanilla Extract, Cool Runnings Ground Cinnamon, Cool Runnings Ground Allspice and raisins and continue cooking until rice is tender and the liquid is thick and creamy, about 5 minutes.
Sprinkle more cinnamon and serve warm or cold.
You can make this recipe using other types of rice. Just be mindful that the cooking time will be longer.
