Protein Pancakes

We've all heard that breakfast is the most important meal of the day. So start your day right with this Protein Pancake recipe that will give you the energy you need to keep going all day! Top it with honey, maple syrup and fruit for a more nutritious version of the traditional pancake.

 

Prep time: 5 minutes
Active time: 35 minutes
Yield: 6 units

 

Ingredients

  • 1 cup British Class Quick Rolled Oats

  • 2 ripe bananas

  • 2 tbsp British Class Coconut Oil, melted

  • 4 eggs, lightly beaten

  • 1 tbsp Cool Runnings Chinese Five Spice

  • 1 pinch of salt

  • Toppings of your choice including honey, maple syrup, nut butter, and fresh fruit

 

Directions

  1. In a blender, add British Class Quick Rolled Oats and blend until it becomes a fine flour.

  2. In a bowl, mash the bananas using a fork. Add British Class Coconut Oil, eggs, Cool Runnings Chinese Five Spice, and salt and whisk it until uniform.

  3. Add ground oats to the liquid mixture and mix until the batter is uniform.

  4. Heat a nonstick pan on medium-high heat. Add ½ cup of the batter at a time, cooking for about 3 minutes on each side, or until golden brown. Repeat the process until all the batter is used. 

  5. Stack the pancakes and top it with your favourite fresh fruit, nut butter or liquid sweetener.

 

Tip
Use a large ice cream scoop to measure the batter. Not only this will help you keep thing clean, but it will also help your pancakes to be naturally round.
