Sprinkle your choice of Cool Runnings seasoning on both sides of each filet until evenly coated.
Heat a frying pan on medium-high heat; add enough butter to cover the bottom of the pan. When the butter starts browning, add the fish.
Fry one filet at a time to avoid crowding the pan. Fry first side for 2-4 minutes, depending on the size and thickness of the filet.
Add more butter to the pan and fry the second size for 2-4 minutes, until fully cooked.
