Corn-Black Beans Salad

Made with tomatoes and peaches, which have a high water content, this refreshing summer salad will help you keep hydrated during the warmest season of the year.

 

Yield: 4 servings

 

Ingredients

  • 2 tbsp olive oil

  • 1 tbsp Cool Runnings Garlic, Peppers & Herbs Seasoning

  • 1 cup black beans (about 1 can, drained, or 1/2 cup, uncooked)

  • 1 cup corn

  • 2 peaches, cubed

  • 1 Roma tomato, cubed

  • 5 sprigs of cilantro, picked

Directions

  1. In a small bowl, mix olive oil and Cool Runnings Garlic, Peppers & Herbs Seasoning

  2. In a large bowl, mix all the remaining ingredients and add the oil mixture until evenly coated.

  3. Enjoy on its own or as a side!
