3 tsp (split into 1 and 2 tsp) British Class Coconut Oil
1 large chicken breast, cubed
1 ½ tsp (split into ½ and 1 tsp) Cool Runnings Fried Rice Seasoning
3 cups rice, cooked
1 tbsp salted butter
2 stalks green onion, chopped
1 cup mixed vegetables, cooked
In a large, non-stick pan, melt 1 teaspoon of British Class Coconut Oil on medium to medium-high heat and sauté the chicken for 2-3 minutes. Sprinkle ½ teaspoon of Cool Runnings Fried Rice Seasoning on the chicken and toss it until slightly brown. Remove cooked chicken from pan and set aside.
In the same pan, heat 2 teaspoons of British Class Coconut Oil on medium to medium-high heat. Toss the cooked rice into the oil and add butter. Stir until all rice is coated with coconut oil and butter.
Add green onion, 1 teaspoon of fried rice seasoning, mixed vegetables and sautéed chicken.
Mix rice until all added ingredients are evenly distributed and the rice browns slightly.
