Crab Curry

Who loves seafood? Cool Runnings has a Crab Curry recipe that will blow you and your family away. Try it and let us know what you think!

 

Ingredients

  • 1 tbsp British Class Coconut Oil

  • 1 medium onion, finely chopped

  • 3 tbsp lemon grass, finely chopped

  • ¼ cup cilantro, finely chopped

  • 2 cans (800 ml) Cool Runnings Coconut Milk

  • 1 cup Cool Runnings Coconut Water

  • 3 cups chicken broth

  • 2 tbsp flour

  • 3 ½ tbsp Cool Runnings Jamaican Style Curry Powder

  • 1 tbsp Cool Runnings Ackee & Salt Fish Seasoning

  • 1 Scotch bonnet pepper (optional)

  • 2 lbs king crab or snow crab with shell on

 

Directions

  1. In a large pot, melt the coconut oil on medium heat and sauté the onion, lemon grass, and cilantro stems until onions have softened.

  2. Add the Cool Runnings Coconut Milk, Cool Runnings Coconut Water, chicken broth into the pot. Start whisking and add in flour, Cool Runnings Jamaican Style Curry Powder, Cool Runnings Ackee & Salt Fish Seasoning, Scotch bonnet pepper, and bring the liquid to a boil. 

  3. Reduce heat to medium-low and cook sauce for 10-15 minutes. Stir it until it thickens to your desired consistency.

  4. Submerge the crab into the sauce. Using a spoon, scoop the sauce and pour it over the parts  that are not covered with sauce. Turn up heat to medium-high and bring it to rapid boil and immediately lower it back on medium-low to simmer for about 5-10 minutes.

  5. The crab will turn pink/red when it is cooked.

  6. Serve on its own or with some rice and enjoy!
