Pina Colada Popsicles

Serves: 6 servings | Prep time: 15 minutes | Freezing time: 6 hours

Ingredients  

            Directions
            1. Prepare the Pineapple: If using fresh pineapple, peel and core the pineapple, then chop it into small chunks. If using canned pineapple, drain the pineapple chunks.

            2. Blend Ingredients: In a blender, combine the coconut milk, pineapple juice, pineapple chunks, rum extract, honey or sugar, vanilla extract, and a pinch of salt. Blend until smooth and well combined.

            3. Taste and Adjust: Taste the mixture and adjust the sweetness or rum flavor according to your preference.

            4. Fill Popsicle Molds: Pour the blended mixture into the popsicle molds, leaving a little space at the top for expansion during freezing. Insert popsicle sticks into each mold.

            5. Freeze: Place the molds in the freezer and let them freeze for about 4-6 hours, or until the popsicles are completely frozen.

            6. Unmold and Enjoy: Once the popsicles are frozen, remove them from the molds by running the molds briefly under warm water to loosen the popsicles. Gently pull them out and enjoy your Pina Colada Popsicles.
